1. GHOST HAWK LAGER

[Kellerbier / 5.0%]

Brewed according to the German Beer Purity Law of 1516 using imported malts and Crystal hops, this American craft golden lager is balanced and satisfying. It’s the perfect beer to wash down a Ripper or enjoy with your favorite pizza.

2. APEX PREDATOR

[New England IPA / 6.8%]

At the top of the food chain this New England-style IPA will sink its talons into your palate with loads of fruity character derived from Simcoe, Citra, Mosaic, and Ekuanot hops.

3. RAVENDARK

[Export Stout / 7.3%]

The aggressive use of roasted grains lend the intense and complex flavors of coffee and cocoa to this mighty foreign-style stout. It will transport you to a dark realm where you just might feel Immortal.

5. SHROPSHIRE LAD

[British Pale Ale / 5.4%]

Named after a poem by A.E. Housman this classic style was brewed with traditional English floor malted barley, which lends a full flavor with notes of bisquit, while Willamette hops impart the earthy, flowery character typical of English hops.

6. CHERRY DAEDALION

[American Wheat + Cherries / 4.0%]

Named after a character from Ovid’s Metamorphoses who was transformed into a hawk by Apollo, this American-style Wheat Ale will soar into your heart with a feathery touch of Crystal hops that round out the refreshing, bready character derived from wheat and our special blended yeast. The addition of Montmorency Cherries to our “crushable” wheat ale transforms it into a crisp and fruity delight.

7. ANIMIST ELIXIR

[Hazy Pale Ale / 5.5%]

Brewed with 2-row malt and 3 different flaked grains then hopped with Galaxy and Moutere, this hazy Pale Ale has an aroma of pineapple and passion fruit, a soft texture and flavors of more tropical and stone fruits.

8. RED RAKE

[Franconian Red Lager / 4.6%]

German "Red X" and Vienna malts impart the deep red color and malty character that hints at notes of cinnamon, which is complimented by a light addition of Hersbrücker hops.

9. WRITING ON THE WALL

[India Pale Ale / 6.4%]

You’ll get the sense that this is a super juicy IPA just by looking at it. Nectaron and Krush hops pack a punch of passion fruit, mango and citrus to rest on the pillowy texture created by a blend of malted and flaked grains.

10. TONSURE

[Belgian Tripel / 9.0%]

Brewed with Belgian Pilsner malt, Belgian candy syrup and a special blend of yeasts, this special ale was aged for five weeks before release. It’s packed with notes of plums, Concord grape and candied spice. The strength is deceptive so enjoy in moderation lest you awake in a monastery with a funny looking haircut.

11. DARK LANTERN

[13° Tmavè Pivo / 4.5%]

Our first Czech-style Dark Lager has a roasty aroma, a complex malty flavor complimented with a hint of Czech Saaz hops, a smooth texture and a soft finish. It's surprisingly quaffable for a dark beer. Na zdravi!

12. HAWK TALK

[India Pale Ale / 6.5%]

This annual charity release was brewed in memory of Danny Bauer... Hopped with Chinook, Azacca, Alora, and Nelson Sauvin. Proceeds will be donated to The Raptor Trust in Millington, NJ.

SAISON D'AUTOMNE

[Herbal Saison / 7.3%]

Our atypical herbal beer uses herbs harvested from my property to accentuate the peppery, perfumy character of the style. Lemon Balm, bee balm, sassafras, catnip and spearmint collaborate with the Belgian yeast and a finishing dose of NY-grown Heritage hops to create a complex, herbaceous bouquet and flavor.
